Recipe for those asking 450g strong white flour 50g strong wholemeal flour 8g salt 7g yeast 30g parmesan cheese, finely grated 2 tsp chopped chives 325g water 2 tablespoons olive oil To finish 1 medium egg 50g grated cheddar Add water to yeast in a large bowl Mix all dry ingredients together and add to the water/yeast mix. Stir together to form a rough dough and add olive oil. Rest dough for 10 minutes, then turn onto your work surface and knead for 10 minutes. Form dough into a ball and place back in the bowl and cover with a linen cloth. Leave to prove for about an hour. Knock back dough and split into 8 equal pieces (I use scales to get even sized pieces). Flatten out each piece in turn, folding it into itself to form a rough ball, then turn over and roll around using a cupped hand to get the right shape. Place them on a parchment lined baking tray, with small, even gaps so that as they prove and then bake they will touch each other slightly. Cover again with a linen cloth for about 30 minutes. After this time they should be *almost* touching each other. Beat an egg and brush it over as much of the surface of each roll as you can. Grate the cheddar and sprinkle over each roll. Place tray in oven, preheated to 200c for 22 minutes.
