It's generally impossible to tell if fish is "sushi grade" or safe to eat raw from a picture alone. • 1 year agoFaroe island salmon is among the best salmon for sushi. Whether or not it's safe to eat raw is really up to the people who handled it before you brought it home. Curing it it with soy sauce to make poké or carpaccio will make it safer by sterilizing the surface, but there's always a risk when eating raw or undercooked fish. H-Mart, in my experience, sticks to a high level of quality control and safety as it's the only place to get DIY sushi supplies in some areas. It's really up to you whether you're willing to accept the risk, as low as it is, of eating raw fish.

• 1 year agoHonestly if you're gonna marinate it in soy sauce you'll likely be fine. The high salt content will kill pathogens. If you're really worried a splash of vinegar or adding some sake/mirin to the marinade will also sterilize through acid or alchohol.
