Le cuisine est bonne et ville de cure oblige, propose un repas diététique pour les curistes. L' accueil fait partie des plus de l'établissement. Nous avons l'impression de faire partie de la famille. "Last time we visited we were wowed by the style and the quality of the cooking here, so it was a great pleasure to see that it is even better than we remembered it was. The format and content of the menu have been rejigged...so it is tasting menu only when the cooking is so strong why wouldn't you want to try as many dishes as possible!? Most of the dishes are new, although there are quite a few that are clearly a nod to or a clear evolution of Michel Guerard's classic creations such as the morel mushroom pillows and the most thoughtfully reimagined marquis de bechamel dessert. A selection of the classic dishes are available in the newly created L'Orangerie restaurant which is in the next room (see below for review). The key style here is a lightness of touch in their cuisine, as well as using relatively ordinary ingredients to stellar effect; their leek dish elevates this humble vegetable to a whole new level. Needless to say the service is superb and it is relatively relaxed in style, a lot more so than you would find in say a Paris 3*. The wine list is of course entirely French with a wonderful selection from hard to find producers and vintages. We were fortunate enough to enjoy the same menu here twice in a week and it was just as enjoyable the second time around. This really is one of the greatest 3* Michelin restaurants in the world. L'Orangerie: The L'Orangerie offers one the opportunity to enjoy a selection of Michel Gerard's famous classic dishes, a selection of his greatest hits if you like. The quality of the food and service is just as strong in this room as it is in the main 3* restaurant. There is now a beautiful dessert trolley from which the generous offering is beautifully plated table side for a little bit of added theatre. This is somewhere that is truly timeless and offers fantastic dishes executed at the very highest level."

"Having read a few previous reviews, one does get the feeling the restaurant is a Disney creation .. modernish build, rustic effects. The menu is limited, with about 4 entrees, and 5 main courses. The staff were polite and most helpful. The pate to start...was average, and my fellow diner enjoyed her salmon. The pork main dish was very average, and the hake too. The pasta with cèpes was tasty, and the mash potato was yet another starch dish. The lovely display of vegetables by the grill looked most appealing, but were just for looks. The baba for desert provided for an enjoyable finish. This restaurant has a great opportunity and need for improvement."

"Puzzled as to how les Coulisses currently ranks number 1 on this site, for Marciac. Perhaps one eats better here in the evening than at lunchtime; only the menu du jour and a la carte are available at midday. That said one notes that the...Menu Gascon features a demi-magret; first time I have seen a half portion of this Gers classic offered on a menu. perhaps that ethos should have warned us. We had the menu du jour, 3 courses with coffee but NOT wine, €15.50 each. Each course was reasonably well cooked, but hardly copious. The beef tongue sauce was tasty, but the tongue itself lacked flavour. The dessert, moelleux de chocolat was (unsurprisingly) on the small side, but was otherwise very good. Service was warm and cheerful and well timed, despite the restaurant being pretty full. We were extremely surprised to see that the wine list contained only expensive offerings, the least expensive being a good €6 more for a standard bottle than any other restaurant visited in this area....and no carafe house wine. The floc aperitif we ordered was averagely priced at €3, however the floc was poorer quality than usual, worse still, less than half the quantity served anywhere else! Our end of meal coffee was similarly only 2/3 of a cup. To be fair, as stated, the restaurant was pretty full, I guess with local office workers, for whom such a meal on a daily basis is absolutely adequate. but if you want to eat a decent special meal, there are plenty of far better establishments in and near Marciac! Sadly, Coulisses seems to be run by passionless accountants."
