That green sauce is just everything and it's never tasted different from all the years I've had them here. The fried corn tortilla strips are perfectly drenched in green salsa that is tart, tangy and zesty and I love how they are so crunchy and not soggy. The chilaquiles are topped with queso fresco and I accompanied mine with beans and potatoes the perfect breakfast after a night out. ::wink, wink:: I opted out of eggs but my husband had his chilaquiles with red sauce (spicier), eggs over easy, carne asada, beans and potatoes, as well. We love the variations you can have. The papas are sautéed with onions, very finely chopped green bell peppers and seasoned with the perfect amount of salt. Their smashed beans taste like they are made from scratch and not canned. We absolutely love the chilaquiles here, you must try!"
