My family and I enoyed our visit to North Carolina A&T State University however the trip was highlighted by a dropportunity in at the Calypso Mama Caribbean Restaurant. Let me tell you the service was awesome and the food was out of this world. Had the oxtails, rice and peas with cabbage. Took home the Jerk Chicken and Caribbean shimp! eating was good, but too spicy. there was pfeffer oil (I suppose scotch bonnet) in the rice and the cabbage, not to mention the stew chicken. I am not new for Caribbean cuisine, I have enjoyed regional dishes from the inseln for over 20 years. there are dishes that they expect to have a certain amount of heat, but if everything has penetrated into spicy oil, it makes it insensitive.
