Muratti has been such an inspiration and an icon in the Adelaide patisserie scene but a recent visit raised some concerns. The classic mille feuille was different in that it had less pastry layers (only 3) and the custard layer was no longer the creamy ‘chef patissiere’ but a thicker, drier clumpy custard and my wife’s coffee eclair had a much lighter coffee flavour, less than before.
