This small family run restaurant is located a short walk from the cable car. Look for the 100% Organic Coffee sign on the road when you come out cable car station (about 100m or so walk). I had the menu of the day, which was vegan, for $7,500 COP. The food was good and tasty, but not as fancy as some of the other veggie places I've eaten at in Medellin.
