Roughly 75% of sushi is intentionally mislabelled, substituting cheap for expensive. If you order "white tuna", you're either very luckily going to get albacore, but almost certainly going to get ESCOLAR aka "snake mackerel" a fish banned for consumption in Japan and Italy.
