I have had the eggplant parm dinner several times. It is always amazing. The one dinner fed me and my son and had leftover for lunch the next day. It's even better the day after. Even My son who is a chef was impressed by the sauce. Whatever your doing keep doing it. The sauce is definitely homemade.
