Respect the produce. Went on a ghost tour and decided to eat at Felons. Entreeof kilpatrick oysters were nice. The oysters with line, ginger, chilli etc were over powered by lime juice. Ordered venison and salmon for main. Both were over cooked but edible. With such amazing produce in Tasmania it's important for the chef to respect it enough to do it justice and cook it properly.
