If they allowed the customers the option to pay a few more dollars for upgrading the fish inside the rolls I would give them a higher rating. They have the Bluefin tuna and belly salmon so why not allow customers to pay the extra amount or difference to get better sushi fish inside the rolls? Not asking for it for free. Paying for it.
