Any fan of the ever rarer true French cuisine should not pass up the Andouliette sausage. A warning this is not to everyone's taste. The texture can be tough and the smell rather strong of offal. This cannot be said off the duck Andouliette that I had at Le Montreize in Vichy. When I enquired further I was informed that their produce was made tro order by a specialist local butcher.
