My go to tea would be Pu-er and Chrysanthemum blend.It is to be expected, and quite honestly it is almost desired that the waiting for table, fast paced service, cart rolling, servers motioning and patrons selecting their favorites dim sum, the noise of people chatting in their native dialects or languages to be part and parcel of a Cantonese-Mandarin dim sum's restaurant.
