"This is a small simple pizza shop just off the main square in Voltera that offers pizza by the slice or to go. They make the best pizza I have ever eaten and that is saying something common from a Chicago Boy. What makes it so special is the combination of of a great crust, which is rolled out over polenta flour that gives it a crunchy nutty flavor, a creamy smooth local cheese that I suspect is a young pecorino, a simple tomato-base sauce and absolutely fresh toppings. The mushroom slice I had was like a wine that flowers in your mouth with layers of flavor that emerge in waves. Absolutely sublime! This is one of the best street food experiences you can get anywhere in Italy. It's been a month and I can still taste and smell that place when I close my eyes."
