The simple couscous, made of corn, without stuffing, reminds my longing Northeast, breakfast or dinner at my parents' home and the voices of my family. The couscous reminds my father, his stories and his hands kneading the corn flour with water and salt and the surprise of finding, inside the couscous already ready, the cheese coalho that my father always added to the dough to make it more tasty. The couscous, for me, is homesick. <br>
