"MICHAEL STÄDLANDER Restaurantat his Eigensinn Farm in Ontario When our dear friends Michael and Monica invited us to visit them at his beautiful Ontario Homes, I need to confess that we don't had the slight less idea of what a wonderful discoveries were lying ahead for us We had never been in Canada and that was a long time due visit for me, my dear wife, our son Anton and his wife Maria Alejandra Last September 17 we arrived at the beautiful Toronto Pearson airport, from Punta Cana, to begin a long time meticulously elaborated Gastrotour and our first stop was there. First evening,our hosts graciously invited us to begin our experiences at Alo restaurant.That was a very pleasant gastronomic surprise. After that we had an intimate and splendid diner evening at their handsome Home, tuck next to a Toronto forest reserve area right into the heart of the City. There we met his son Marc and Deborah, his wife. What a nice moments we had with them in preparation to our scheduled trip, next day, to their Country Home at Meaford, by Lake Huron shores. There, besides their home treats, we will encounter a fantastic gastronomic event in the manner of a Festival at Eigensinn Farm, home of the famous Canadian chef and farmer Michael Städlander and his wife Nobuyo There they grow and raise - free range and no GMO- their own vegetables and livestock (chickens, porks etc) and what they get from Georgian Bay, to be offered, most of the time, in regular 8 Course Set Menu for lunch-dinner hours of the week. Once a year they offer a multi-course meals event called " Feast of Fields" of Ontario, held in their place But their Place is not "any" place, even for me (raised as well in a bucolical farm near Hato Mayor del Rey at DR). Their Place is lets say; a whimsical, almost a mystic and bucolically setting in the middle of a hilly and woody area of Eigensinn in Grey Highlands, near lake Huron Being honest I'm obliged to recognize that I did not expect to find such a fantastic place that shiny day on september the 20, 2015...and I had been in many-many different places Michael was borne in Germany and trained as professional chef at some of the best Ontario restaurant and then he finds his way to work in his place and in his Food and Music Festivals and trying to bring Canadian food to it bests Was in one of those days that we, estrangers in the area, by one of those coincidental destiny fate, by the hand of our friend Michael, encountered ourselves in a fantastic Food & Music harvest Festival, in a rustic, but magically almost unrealistic set, where nature preservation was high in their intentions As architect my self I found the place the most enjoyable one:The layout of the setting, the old-simple-recicled materials in tables, benches, informal covered areas of all kinds (we call them "enrramadas" in Spanish) even the toilets, the Barbecue them-self, the cover for the Classical and Jazz music performed by top Canadian artists... and so many details that I would failed trying to describe them all. One not so "small" detail is how proudly was there, in the middle of the setting, high in his rustic pole; the Canadian flag This particular day Event was by invitation only and we were lucky enough that Michael was one of those guests, but of course it was a paid for person event As we were overwhelmed by the setting itself it took us sometime to realized that together with Michael were working, in different areas of food specialities, other 5 Canadians renowned chefs. Those chefs were diligently working either in the roasted pigs and chickens or in Oysters, Foie Gras, Soups, Salads and desserts. We were encourage to bring our own wines and we did it; some Sancerre from Loire, France as pre-lunch drinks and some Tiganello Antinori Supertuscan red wine, for the BBQ meats A note regarding the BBQ note is in order; this word comes from the original French- spanish caribbean islands ; BARBECUE. Its meaning is the pork ( or other livestock) to be cooked "from Head to tail". From those islands this cooking procedure traveled to the New Orleans Area with the african slaves Now getting to the cooking in our Festival day :It is my humble, but obliged opinion that, regardless the hard work of the cookers, some of the porks were not properly cooked. The fatty was too soft and bland and did not bring its needed flavors into the meat. In my plate I did worked, unsuccessfully, for sometime trying to find the best flavors on it. I almost felt sorry for those chefs, because they worked their best and very hard for hours on it. Regretable, most of the guests that tried that pork, as I noticed, did not like the way it was cooked either Of course this would be an encouraging critic after the Event as in the Event itself we noticed the enthusiasm of all those guests waiting and waiting to try that barbecue pork. We rather opt to eat all the others recipes that were great We meet Michael Städlander - a tall smiling big guy- for a moment, as he was pretty busy with all that cooking, sharing moments with guests and even the Ontario Press that was covering the Event I would like and wish to have another opportunity to try the regular daily cooking of Michael as he seems and sure he is....a great chef ! Of course I highly recommend a visit to the Städlanders Farm and Restaurant magical Place, regardless the driving time from mayor cities...you will not regret it !"
