"Did four 1 star Michelins in Amsterdam back in April. Zoldering, MOS, Sinne, and Lastage. In general, my personal feeling is that the cuisine in Amsterdam is a little over-rated. Nothing bad but there are plenty of equivalent quality restaurants without a Michelin star, ie. I can name a couple in Chamonix without any stars. The Dutch seem to love their celeriac, basically a celery root. Seemed to be a running theme at several restaurants. Our favorite was MOS, on the waterfront by Centraal station for its wonderful views. The thing that ruined our experience was the excruciatingly slow service. 45 minutes between courses. They pride themselves for the non-rushed service but this was ridiculous. Other annoying thing was instead of a wine menu, the waiter asks what style of wine you like and they pick it for you. They give you a tasting to see if you like it, before pouring a glass. After saying no twice, you feel pressured to just accept the third selection. I like to know what I 'm ordering. Thought the wine selection by the glass was a bit weak."
