"If Mrs and Mr Carsten are on the island in 1972, you can be quite sure that you will find the two in the Budersand hotel. For two years, the Monday afternoon has been firmly booked for an action from the culinary calendar of the hotel's gastronomy. Then there is the BUDERSAND BOUILLABAISSE, more info on this on the HP. If it fits with the tide, we hike from our holiday domicile in Ramtum on the Watt side through the Watt to Hörnum. The way along the watt or through the watt, depending on the water level, then ends along the golf course at the port and you can go directly to the terrace in the Budersand. Unfortunately it rained on this Monday about the morning and the tables were all quite wet. Thus the service told us that we could only eat inside the bar. There were already reserved tables that Bouillabaisse Event was talking around. We weren't really excited. The bar is really appealingly eager and we have already spent nice evenings after entering the Kai 3, but the furnishing is not really suitable to feed comfortably there. We had noticed our sad faces and, because it was cleared out and the sun was more and more apparent, we were asked to go outside after our order and asked us to choose a place. Thank you very much to the service team of Budersand Gastronomy! As always, you feel welcome and care for yourself! It then became this place with a direct view of the water now reappearing on the watt side of Sylt and the port entrance of Hörnum. The building is not really an eyewitness in my not professional eyes and a successful design, but both from the quay 3 (behind the terrace) and from the terrace you look at the sea. It remains, the view from the building to the sea is better than the view from the sea to the building. What is also true for the third catering of Budersand is that Strönholt up on the dune above the adjacent golf course. So we sat in the basket, the sun shone on our legs and we looked at the sea. Order was made, a bottle of water served and we waited for the Budersand version of the Marseilleese fish soup. At first we were fed bread and butter. That was probably merchandise from the local baker, neat, but no more. A bit of a pity that you don't try to serve a really good baguette. That would be much better for the French soup. The service then served us the Bouillabaisse with the supplements. In Budersand comes on the hot plate of fish, the classic varieties, with vegetables, bissfest cooked, that already very deviates from the original. Classically, however, the supplements, on the one hand, a garlic-dried and roasted baguette. Like a roulette. Here the kitchen remains in the classic recipe. In a saucer then a steaming hot fish ballion, which is poured on. Bouillon does not describe it adequately. What the kitchen draws from fish carcass, vegetables and spices there is a brew of the top class. You could also put an obelix-dimensioned boiler from this fund, I would empty it until the last drop! Together with the vegetables and the fish, it is of course just as good. Now bread and baguette are also used together with the roulette, because on such a soup I do not smell cheese or roulette at the edge of the plate, this procedure at the bougais enjoyment I spare. Woman and I swore in eating this extraordinary good lunch! The offer actually includes a glass of wine, but we always change it to a bottle from the well-stocked wine map of Kai3, which can also be used in the Vinothek bar. Last year we had a wine from the Burgundian winery Mikulski, see my last review of Kai 3 from 2020. We ordered him for soup. In the map and known last year, the aligote from old vines was born in 2015. At some point at dinner I looked at the label more closely, and experienced a nice surprise. The young gentleman who served us the wine after a little longer waiting period (but before the soup) explained this with the wine cellar being surrounded. He had to look for the wine for longer. And he had got a slightly older bottle in his hands, but it was charged at the same rate as the younger wine. Thank you very much. So I can come to the conclusion of our Monday-Mittag-Einkehr 2021 to Budersand. In the south of the island, Budersand Gastronomy sets the culinary exclamation marks. And that in all matters, both from kitchen performance and from service. Always worth a return! We'll get back to Kai3, to Strönholt and to Vinothek! "We are stranded here because the majority of restaurants had already closed or not opened. I chose a simple salad served with eggs that have not yet been learned. I guess they've been there for a week for a proud price of €14.90. We were the only ones with two other guests and had to wait one hour for our food. In addition, the apple choir was served by the reusable bottle of the lidl. I cannot recommend this restaurant to everyone."

"An authentic but upscale fish bud with playful interior, delicious fish dishes and nice service staff. However, we were mistaken in dealing with the Corona rules, which I admittedly do not know for Sylt currently. For example, the staff -indoor- had no masks. However, large plexiglass discs were attached between the tables for separation. But this should not diminish the otherwise good impression. A recommendation for fish lovers! In addition, it should be noted that card payment is not possible/was."

"If my wife and I are on the island, we prefer to stay in the south of Sylt. In the north, in List we always like to enjoy a few oysters at Dittmeyer, with the middle of the island we cannot start so much. The South that is of course Rantum, where we log and Hörnum. In recent years, Hörnum has made a really significant development towards demanding gastronomy. In front of the Sylter Muschelbude in the harbour there is now a basin with impressive large blue living lobsters and a few large Norwegian royal crabs, the Budersand conglomerate stands for itself, in the Strönholt and and in the Kai 3 we have also spent beautiful evenings this year. Just like the obligatory Monday afternoon with a again excellent Bouillabaisse. The former Breizh from Hapimag is now newly opened as a beach farm, our Borgfelder has already registered it. Also a wonderful place to return, kitchen will certainly be tested once. But where I've never been with my wife, that's the bistro from the fish store Matthiesen in the middle of Hörnum, opposite from the bakery Lund with its highly coveted strawberry villages. In February we were in for lunch because it was so empty and had eaten a fish soup, the stay, as well as the soup we enjoyed very much. This visit gave us the idea of booking a table at night. Said, with a run of a few weeks, Ms. Matthiesen reserved me by mail a table at 6 pm in the bistro. There's another round at 8:00 a.m., but as we wanted to come with the bike from Rantum, the early round of the better appointment appeared. It was also not to be expected that we would stay there for dinner as long as in Kai 3. The KW 33 of the year 2022 pampered Sylt with welding temperatures far over 25 degrees and an almost missing wind. This made cycling generally and also our evening tour to Hörnum to Matthiesen very pleasant. So we were relaxed at 6:00 p.m. in front of the shop and the bistro. As always, a lot was going on and in the store. On the left hand you can find the bistro with tightly placed two and fourer tables, on the right the shop counter with the offer of the fish trade. In addition to guests and customers, the Take Away business also flourished, and several customers picked up their warm dishes. A young lady took us in reception and on our naming we found our table fast. We took place and the young lady handed us the cards. They can be seen on the HP. The lining in the counter area of the store lets every connoisseur sneak with the tongue. From fresh fish to smoked goods to fish and seafood salads and preparations there was much to discover. Because so we asked the young lady if it was possible to put together a selection as an appetizer. No problem was the answer! Great, then a Buddel Flens as a drink. Ordinary wines are also available, but on our evening we had a sense of beer. Woman went to the counter to make her choice that I would join (must). In contrast, she expected the young lady with a large plate and from the distance was already able to see how difficult it was for my dearest to meet a selection that would not blow the frame. In the end, this plate came to our table. River Cancer Cocktail was on it, red herring salad, shrimps in oil, graved salmon as well as Wakame salad, but only for me, as a surprise, my wife finds the inedible. I love this algae preparation. Our young service lady came back again and brought a bit of bread. There are not so many appetizers in the fixed card, but on the counter you can put together a beautiful appetizer after its gusto. We were very happy with our appetizer and had time to eat. Oysters had already eaten list, so they weren't on it. With the second bottle of Flens then our main dishes. When you look at my wife's choice, you can also see why there were no crabs on the appetizer plate. Crabs loves them about everything, I had already wondered, but now this was cleared up. North Sea crabs with two fried eggs and roast potatoes had wanted to be the main food. My wife wouldn't be my wife if the BK hadn't been replaced by a lukewarm potato spill salad. That was not a problem and a good idea, because it was really delicious! With a bottle of 2 from the river we hit, even I had my main dish standing before me. Fresh herings, roasted with potato salad, my order was to you kitchen. Somewhere I said it, I love hering! After the sour inlaid brathering on Sunday evening, the green version, fresh and crispy roasted. Then a potato salad, homemade, with mayonnaise. I'm a North German socialist and sometimes I have to have it. If you eat my Swabian wife, then he will not be accepted, for the part of my family is Mayo in Salat Haram! So I enjoyed great fish and delicious K salad. We were tired after that, more did not go, except to give the kitchen a great praise. The service in the form of Ms. Matthiesen and her young colleague, who, despite the great hustle and bustle in the shop, always took time for their guests, did not let themselves be stressed and took care of with joy and affection! Don't go better and have been rewarded with a reasonable tip! So to the conclusion of our first dinner at the Bistro von Fisch Matthiesen in Hörnum. My expectations were exceeded! And that actually says everything. I had expected a good fish kitchen, but not a so carefree team (kitchen and service) in the Bistro. That was fun, well tasted, and we're coming back!"
