"How can you go to Lyon in France, and spend your first evening making pizza with an Italian from Apulia? When in Lyon, you're supposed to try a bouchon, a traditional Lyonnais restaurant that specializes in offal -internal animal organs such as calf heads and pork cheeks. Sorry. I'm usually up for anything, but here I drew the line. This is how my friend and I met Guilliano Mardino, owner for the past 12 years of Il Palio. While wandering the back streets near our hotel, we spotted a bright red neon "Pizza''sign, and wandered inside. Guilliano is from Apulia in Italy. We both ordered Pasta alla Norma in honor of my Aunt Norma. While we were waiting, Guilliano invited me ( "Hey "American!") back stage to try my hand at making pizza dough. The owner, the cook (from Slovakia) and the waitress treat customes like family. Truely a local find. Our bill came to 30 euro with an antipasti and wine. Quite a bargain in Lyon!"
