"We last visited this one star Michelin restaurant three years ago and were underwhelmed as every dish was prepared sous-vide.Using a Groupon voucher, we had been enticed to try again.We were not disappointed!The menu was somewhat unusual in that we were first questioned as to our likes and dislikes. On our responses, the chef was to create our three course lunch. A different approach which had the ancillary effect of making choice of wine impossible. Fortunately there is a decent selection of wines by the glass as well as a very creditable list of half bottles.Although we were intending to eat only three courses, we were presented with an array of amuse-bouches in the style of Provence with our Laurent Perrier champagne aperitifs. There then followed our starter which was a lightly poached egg in a truffle and mushroom foam sauce served in a bowl resembling the crater of a volcano. A subtle combination that exuded wonderful flavours.Four choices of bread rolls were presented with little pyramids of three types of butter by Le Beurre Bordier. I buy their butter myself! It is incredible.My wife prefers fish to meat and her main was scallops in a truly amazing sauce with sous-vide fennel. My main of veal was perfectly cooked and very tender. Again the Provence influence was present in the ratatouille. Various slow cooked beetroots and mini turnips make the plate a picture.No cheese for us although we were offered and did see the chariot which had a good choice of local and other cheeses.Dessert was an amazing sugar work creation - a perfect representation of a peach filled with Nicolas Isnard's interpretation of a Peach Melba. Unforgettable. .Finally, a plate of purple themed mignardises arrived with our coffee. Brilliantly fresh and far too tempting.The only downside was the rather aloof service which detracted from a truly inspiring and memorable meal.In summary, a first class meal worthy of the Michelin star held by Monsieur Isnard. Shame we did not get to meet him or to visit the kitchen.We will be going again soon so perhaps we will actually have a chance to speak to him in person?"
