"This restaurant is managed by a genuine Argentinian lady, has an Argentinian flair and (naturally) serves Argentinian meat. I ordered a medium-sized piece of rump called cuadril, done rare, in Lima it is called “a la inglesa”. To my surprise, the meat turned up overdone by a fairly wide margin, which was quite a rare occurrence in my experience with Argentinian eateries in South America. Usually they get your beef prepared to your exact specification. Don’t get me wrong, it was still an absolutely deliciously tasty and juicy piece. Nevertheless, when the lady came by to enquire if everything was all right I felt an obligation to express my mild criticism. She immediately offered to replace my serving, which I declined – the beef tasted great. Regardless, in a few minutes she reappeared with a palm-sized serving cooked exactly to my preference. Oh, my, even for Argentinian beef that was unbelievably good: it just plain melted in my mouth. That´s the spirit..."
