"We were patrons of the much adored Hilton before the renovations and the food was exceptional and always consistent back then. The revamp is impressive, Balsa restaurant has a really good vibe, high end design and we love to sit in the beer garden on...a sunny day. The pub menu is better than the restaurant and more consistent which is strange as it comes from the same kitchen. The below are our go-to’s on a regular basis: Flatbreads: Tomato, baby zucchini, red onion, basil, black olive crumb ve 18 26 Market fish fillet, charred baby cos, lemon, 32 Spiced prawn, smoked cheek bacon, cherry tomato, fetta dfe 21 Only thing that would really really benefit these would be a chilli oil! Sliced mild chillis in olive oil is not sufficient (this is what is offered if you ask for chilli Oysters gf,df Always top quality Raw tuna tostada, avo, pickled melon, chilli gf,df So full of flavour and always good. Potato scallops, wakame-vinegar salt, aioli gf,v,veo Yum! On one evening dining in Balsa we unfortunately had to send the prawn pasta back twice! Pasta is so simple but if cooked incorrectly ruins the dish. It was hard yet gluggy (not al dente, almost as though it was left to sit in warm water? . The flavour was also really lacking. I can see this is now not on the menu, I will try the Orecchiette next visit as surely someone was just having a bad night in the kitchen. Another evening first weekend out of lockdown we went to Balsa again and we weren’t super impressed. I had the fish and chips which was dry and over cooked. The lobster roll was good, we didn’t enjoy the Octopus though. Cocktails and wine list is great but it is such a shame that the food doesn’t seem consistent. It is a great venue nonetheless and with a visit. I just feel it has more potential with some refinement."
