"I didn 't have good memories from a previous visit several years back, but today I had a splendid lunch here. From the amuse-bouche (freshwater fish with a cream made with the orange part of a scallop) you see already that the kitchen is willing to invest thought, care and effort in what they bring to you. There were three types of 4-course menus available (all at €42), plus some choices a la carte. We went for the most traditional one, the Trentino menu, but even in this one there was flourish and creativity and elegance. And they kindly allowed us to replace the starter of salmerino (arctic char) with a luscious Jerusalem artichoke cream with a crsip tempura of freshwater fish, some ricotta enhancing both flavour and texture. The primo, tortelli with Trentingrana, was certainly not your standard tortelli covered with butter and grated cheese: no, the cheese was inside, in liquid form (memories of Heinz Beck 's famous fagottelli), while outside you would discover all sorts of garnishes of wild herbs and flowers, as well as lardo and a jelly of vinegar. What a complex dish, from such humble origins! More interesting garnishes came with a supremely moist and aptly cooked rabbit in the elegant main course. To conclude, a chocolate crumble with...vegetables! It might not have worked, but it did. This was 'conceptually ' the most interesting dish of them all, really creative, sharp, and well thought out, although, to be critical, I found it a little dry: an extra sorbet ball, or less crumble, would have made for more balance, in my opinion. We were the only guests at lunch, so we had the kitchen brigade all for ourselves, and I honestly do not know if they can perform at this level under more pressure. What is for certain is that at this price this level of cuisine is a real bargain, also considering you are in the stunning setting of Castel Pergine (and I found the portions generous). Our waitress was super-charming and informative. With so many mediocre places around at similar or higher prices, this in comparison is a gem where locals and tourists alike should flock to."
In nice weather you can even eat and drink in the outdoor area.
