"Very long wait even though there were very few people (more than 1 hour) They apologized for the wait by letting us taste a couple of slices of pizza that they had from the counter (the dough was very chewy but I thought it was old). The time for the pizza finally arrived (buffalo mozzarella, raw ham, rocket and cherry tomatoes which are really fresh and this saved them a little) because I have to admit that from the dough I would have expected a soft and crunchy pizza on the crust. The internal bubbles, an indication that the leavening development of the dough has taken place in the correct way, makes it clear that the leavening is good (an indication that the 72 hours probably does it) But the fact that the outer crust is very rubbery after cooking has penalized it a lot (when cold you need a good jaw) It makes me think that the pizza dough is probably cooked then frozen or blast chilled and then reheated if necessary In my opinion something should be reviewed with an adequate course in White Art (baking) There is room for improvement"
