"The ambience and decor is stunning. The service is good and clearly trying to emulate a 3 star Michelin restaurant. The food however is trying too hard to be something it is not with a chef who does not want to hear criticism. We found bones in the eel dish and he told us it was normal. Which in the dish he prepared it was an unacceptable error. The restaurant is so close to being amazing but they must return the focus to the quality of the food preparation, the seasoning, the acid balance of the dishes (all we’re lacking acid and interest) and the cooking of the meats (fish was overdone and pigeon was under seasoned and undercooked (even for those of us who like medium rare pigeon). Overall we are happy we went they are a modern take on traditional Tuscan food. But if they want a Michelin star they need to step up the level of cooking."
