"We dined here few years ago when it was a 2 star and it was a memorable dinner. I am normally skeptical about 3 stars as it becomes too fussy for my taste. On the contrary i can confirm Norbert and team kept the dining experience sophisticated but realistic and the dinner has become even more memorable. The mantra is cook the mountain using only local produce.Each portion is obviously very special and has a particular history (as explained by the waiter) but it 's also something simple and that comes from next door. From the butter to the fish to the veal to the pasta etc. There are 2 fixed menus to choose from (a classic and a less classic). Each has at least 6 courses another 6 amuse bouche. The dining experience is well explained and it takes at least 3 hours. Tables well spaced from each other and nice lighting throughout the dining room. The service is excellent and pretty much spotless. I am fussy about wines and the sommelier did a good job by suggesting excellent local product which i never heard before. If you are skiing in the area and looking for a special night out i strongly recommend. my only suggestion would be to improve the choices of local wine producers. I also thought that the pudding was not as fantastic as the other courses (but the bar is set very high to be fair)."
