Calzone Recipe
Step 1: In the pan of that fancy bread machine you kids talked me into buying, put water, salt, bread flour, dry milk, sugar, and yeast in the order the manual says. Press that Dough cycle button and let it do its thing. I remember when your mom used to do this by hand, but I guess machines are the way of the world now.
Step 2: Once the cycle is done, roll out the dough on a floured surface. Make it into a rectangle, 16 x 10 inches or whatever. Who even measures these things? Transfer it to a greased cookie sheet. I used to be able to do this in my sleep, but I guess I'm a bit rusty.
Step 3: Get a small bowl and mix together the pepperoni and mozzarella. That used to be your mom's job, you know. She loved to help in the kitchen, just like you when you were a little one. Spoon some pizza sauce down the center of the dough, add the sausage and cheese filling.
Step 4: Cut diagonal strips along each side, then criss cross them over the filling. Make sure to seal the edges with some water, or else it'll fall apart. Brush the top with melted butter. Your mom used to do this so gracefully, like she was born to bake.
Step 5: Pop that tray into the oven at 350 degrees F for about 35 to 45 minutes. I remember when your mom used to watch the oven like a hawk, making sure everything came out just right. Now it's my turn to try and recreate those memories with you.
