Prawn Recipe

To start, preheat your oven to 475 degrees F (245 degrees C) and line a sheet pan with aluminum foil. Brush the foil with a tablespoon of olive oil. Prepare the prawns by carefully removing the shells and legs, leaving the tail attached. To butterfly the prawns, make a slit down the belly side of the shrimp, almost to the skin on the back, and open it up like a book.

In a mortar, combine chopped garlic, kosher salt, oregano, thyme, and fresh parsley. Pound and stir with a pestle until it forms a paste. Add olive oil and mix until the oil is infused with the herbs and garlic. In a mixing bowl, combine breadcrumbs with the herb-garlic mixture, salt, black pepper, cayenne, chopped parsley, and grated cheese. Adjust the consistency with more olive oil if needed.

Lightly coat the cut side of the prawns with the crumb mixture and place them on the prepared baking sheet. Bake in the preheated oven for 8 to 10 minutes, or until the prawns are cooked through and the tails curl up.
