"Where do I begin?Let me preface my review, by qualifying as follows: I am a diehard burger nut. Anywhere with claims to a "gourmet" burger; I'm there trying it out with bells on, pulling up a requisite enamel coated stool before the paint on the custom graffiti art wall has even dried.Fudds has taken me a little longer to get to, as it's 25km from home, and thus far only opens for a weekday lunchtime on Fridays.I picked an outside table, and was cordially greeted and handed two menus. It's always a strong sign when the drinks menu is double sided, and the food menu not. You can have as many drink choices as you want, but with burgers, it's important to have a more modest range, that you can cook exceptionally well, consistently.I picked the Double Cheeseburger, added bacon, fries, and a crumbed field mushroom (which seemed to be a bit of a specialty) on the side. And a "Shifty Lizard IPA" to drink, which came out in a proper craft beer tasting glass. The menu "warns" that the meat is served medium unless specified, and this was reiterated upon ordering. Fortunately, I love my meat on the rarer side.The meal arrived quickly, and simply presented. Let the burger do the talking.The server plonked it down with a smile and admitted "I'm actually jealous of your lunch choice. Well ordered!". All I could think was, "Ehrmagherd!" (sic). You'll want to refer to the picture (look at it, LOOK AT IT!!), but let's break it down briefly:The brioche bun was expertly toasted.The sauces consisted of the requisite ketchup and mustard on top, and "Fudd's" sauce (basically a form of the frysauce/mayo hybrid that's becoming so popular), served UNDER the patty, which made the bottom bun deliciously drippy, but not enough to ruin the texture of the bread. Sauce volumes are so important.The bacon was sliced very thin and layered over the patties like shaved ham on a platter, which is undeniably the best way to serve bacon on a burger. Regular rashers are too thick, and take away from the texture of the beef.The double patties were expertly cooked, just on the pink rather than red side, with the cheese melting over and in between. Squeeze it and the juice came out entirely clear. The meat was top quality ground beef, with just the right amount of chewiness to give it fantastic structure and texture. An occasional slightly chewier piece of chuck that rolls around your mouth really highlights the meaty goodness.There were "shaved" pickles and red onion under the patties also. I always get worried when a menu uses the word "shaved" for pickles, as sometimes they are sliced so thin they become translucent, and lose their delicious crunch. Fortunately this was not the case.I could tell at this point that the owners were complete burger nerds; hovering around (but not too much), to witness the surprise and delight of their first time customers; dropping phrases like "meat ratio" and the like. I could just tell they wanted to sit down with every customer and share the experience with them.Now, it is the prerogative of a burger joint to make an excellent burger. But too often, the focus is ENTIRELY on the burger, and the sides are an afterthought. Not at Fudd's. The fries, a happy halfway thickness between shoestring and chips, were beautifully crispy, but not overdone; the field mushroom juicy and with an excellent crumb.I can confidently say that the burger was easily in the top 3 I've ever had, out of (no doubt) thousands. Whether it's first or third comes down to personal preference and mood, as much as anything. But the quality of the sides, the excellently curated craft beer range, and the equal-parts friendly and highly personal service, means as a total burger eating experience, Fudd's is simply in a different league.This is a burger experience I would get on a plane for. Six stars, because five isn't praise enough."
