I am originally from here so i can guarantee that the traditional dishes (tortelli di zucca, luccio in salsa etc) are made to perfection following the unwritten dogmas of mantuan cuisine. But they always manage to offer a few innovative dishes that elaborate on the tradition to create something new and exciting, like the prosciuttto di Parma served with a Parmigiano Reggiano gelato served in a crunchy parmigiano cone."
