Back in the 70’s, Chubby’s was “IT” for Mexican food in Denver. They still have the most “Colorado” style Mexican food around, but the best is over at the original location on Lipan street. They call it Chubby Burger, but this place is all about traditional lard frijoles and spicy green chile. If you want to taste the real flavor of Colorado, Chubby’s is still the place.
