"I'm not sure how many of you are Tripe fans, but I've loved it since childhood! It is rare to find it on a menu, unless you are in the southern Italian sun, although I occasionally offer it in upscale Italian bistros. Joe's version is perfection... it literally melts in your mouth and vies in quality with my Nanno 's....! On a broader note, I have never been disappointed by one of the dishes in Casa! Authentic sauce, all farm fresh ingredients and you must never...al dente! This is Italian!"
