"Simply put, Rubicon is outstanding. The wait staff and sommelier are great and the food is sensational. We had the 'design your own ' 6 course degustation with paired wine and each dish was perfect. "This restaurant is an icon in Canberra which is a city that boasts of its foodie prowess but does not always live up to the challenge. Dinner here is a glorious event especially if you attempt the four course degustation. Starting with the Snow River Rainbow Trout with potato, leek, veloute, caviar, shaved chestnuts and salted egg yolk you can already see that this is as much about taste as it is about excellent presentation and endurance for the stomach. Follow this up with the Morton Bay Bug Tail and you are pushing the limits. The meal was well paced and we found the timing impeccable so that each course could be savoured. Wine list good but not innovative. The whole meal was excellent and we always return. Service superb and attentive but not intrusive. I'd recommend this restaurant for that special night with a special someone."
