Dark, incredible roux was the base of the best gumbo I've had outside deep Cajun country or my Aunt Francie's kitchen table. We also ordered an alligator appetizer, perfectly fried and sauced, and a bread bowl filled with buttery jambalaya goodness. Ordered boudin balls and some crawfish. The boudin balls were excellent. Some of the crawfish was good but out of my 5 pounds, about 2 lbs of it was inedible due to being extremely overcooked. Kind of sucks that I paid $34.99 for my crawfish and couldn't even eat about half of it since it just completely fell apart.
