What Ethan R doesn't like about Baton Rouge Cuisine:
Quality used to be much higher. The rice in the etouffee was either undercooked or had been sitting a long time…it was very crunchy. The etouffee itself had good flavor, but nothing identifiable as a piece of crawfish…just mush. The fried fish was hard, tough to chew. They were out of red beans and rice.
