"My wife and I had the chance to dine at chef Olivier Bellin's table a while ago. This experience left in us an indelible memory. Far from the technical and flashy dishes, the sobriety of his presentations is matched only by their elegance, their generosity and their tastes! Each dish is a slap in the face, with devilish accuracy and angelic sensitivity. The firings are pearly to perfection and the combinations of land and sea immerse us in his two-footed universe. This chef loves his region, his products and teaches us to love them throughout the evening. We will never look at Brittany with the same eye again : We need more chefs like this Olivier, who after several decades, still in the kitchen, offers a part of himself to each of his customers."
