"The true sage is not about the healing of the disease, but about its prevention. Often the road is the least traveled is the way that leads to enlightenment and nutritional freedom. During our time in Fukuoka, Japan, my wife Misa and I, who was born and raised in the region, visited the best vegan, macrobiotic restaurants including Haze Rouge, which sits one hour outside the city in the Mino Mountain Range. Open from 11:30 am to 15:00 pm (the last order is at 22:30 pm) Wednesday to Sunday for lunch, then from 6 pm to 6 pm for dinner (reservations required), Haze Rouge is run by macrobiotic cook Hirata Atsushi. Originally based in Tokyo, Hirata explained during our brief conversation that he was moved to Kyushu after the nuclear disaster. We decided to travel by public transport, against a trip from Misa relatives. The trip took about 75 minutes from Nishitetsu Fukuoka station on the Nishitetsu Tenjin Omuta line towards Omuta. This express train only sees three stops and in 30 minutes you get off at the Kurme Station and go down to the bus station. Drive in Kiosk 3 for bus 20 towards Yoshii Eigyosho and drive it around 17 minutes and 13 stops until you reach the Dairobaru stop. The surprise was how cheap the portions were compared to other macrobiotics restaurants such as Evah with very minisculendien. Our ensemble consisted of the following and costs ¥5500, about $55 to $60: • My first dish was a homemade soy yogurt with vegetables and fruits (tomatoes, mushrooms, okra, oranges, peas, pears and linseed), and her dish was a green salad with tomatoes and peas covered with a fermented soy dress. • The second dish was corn and brown rice soup before the three main courses mentioned were served. • Main Dishes: o Antique Farro Pesto Pasta made in tomato sauce. o Tofu burgers with zucchini, coat tomatoes and crushed in a bean sauce (no bread). o Spicy Chili Curry over brown rice, reminiscent of cumin or turmeric. The waiter later confirmed that it was actually turmeric. • After the tofu, pasta and curry, an ensemble of brown, rice, elan soup and tsukemono (Japanese-preserved vegetables) was served. • Finally, Haze presented a macrobiotic dessert of coconut ice over peaches and berries. • Green tea is added during the culinary experience."
