Hotel restaurants are such a thing: it should be done to everyone and then the thing becomes arbitrary. Not here! It is very carefully cooked and refined. This has its own handwriting, modern and original, but without chichi. The fact that the poularde was clearly too dry on a day remained a lonely slip.
