I fell over this place when I saw how the man spit the coals in the multi-force. the spits (souvla) was made with lean lamb, but with a fat plate on the top to probably stop the lamb from scorching and drying out as it rotated. it was a pleasure to observe a perfectionist chef, do his best in cutting the finest slitter from lamb out of the spits. the resulting taste was completely divine. the combination of delicate...
