I ate French cuisine at Boire un coup in Takanosu, Kita Akita. Chef-owner Jun Kobayashi has experience in Tokyo and France, and uses French techniques to bring out the goodness of Akita ingredients in his hometown of Takanosu. I had the opportunity to chat with Kobayashi-san a lot that day. Having traveled throughout France, he also understands the cultural differences between regions. As a sommelier, he also offers delicious wines. He deliberately processes fish in a French style even when soy sauce could be used. The balance of sweetness, acidity, bitterness, and umami in the pickled bitter gourd served as an appetizer was excellent. The mayonnaise, made in-house using pickle vinegar, added depth. The potatoes served as a side dish with the main dish were sweet like sweet potatoes and were purposely toasted to a crispy texture. The Thai dish left a refreshing lemon aftertaste. The cooking and seasoning have a twist that leaves a surprising and lasting impression on the palate. A strong and memorable culinary experience is etched in Takanosu, Kita Akita. It is said that Kobayashi predicts the image that the taste will evoke in the mouth and cooks accordingly, considering the composition of flavors and presenting it on a plate. The butter that soaks into the bread is delicious, and it is said that they use bread from a friend in Akita City. Although they make their own bread, it seems that the bread made by a professional is even more delicious. When in Akita, instead of spending 4,000 yen at an izakaya, it is more enjoyable to experience surprising flavors here. You can casually enjoy French cuisine.
I had the sautéed chicken breast for lunch. The cooking was perfect and it made me feel really happy when I took a bite. The vegetables also had their own distinct flavors, which I really enjoyed.
