I smoke a lot of my own meat, so I am with how much fat comes on a whole brisk, especially when they buy it from costco. but most cooks allow to melt away and taste the actual meat, then cut most of it away to serve. the amount of fat they served on the mac cheese with brisket was simply inevitable.
