I have been buying from this butcher for years. He is one of the rare butchers to still make all his charcuterie himself (dried or cooked sausages, terrines, tripe, pâté de tête, raw and cooked hams, calf's head with a gribiche sauce to die for and in periods holidays: foie gras and homemade smoked salmon...etc).
