window on the rock, a real Piedmontese betola environment, we fell into the history of the susa valley kitchen with some wise escapes outside the door. There are so many courses I miss. Mixed sliced, the gracious soup (bread, broth, cabbage and cheese,) the caiettes (only called gnocchi is a crime,) tuna calf, napkin ravioli, hot sunrise robiola with hazelnuts.
