Pho ever knows how to cook their meat. Instead of deep frying everything, Peter roasted the chicken that has really crispy skin without making it dry. The beef in the curry “soup” is very tender. I said soup because this curry sauce isn’t like a sauce but a soup. It is sweet and I confirmed with Peter, the boss, that he put tomatoes into the curry.
