"This is a fairly new Italian restaurant in this small town in Bourgogne. We had dinner there on a recent weekend. Overall, the experience was disappointing, but I attribute that mostly to the usual difficulties in developing a rhythm and cohesive team at a new establishment. The menu is very limited. It appears to be lasagne or a formule. Perhaps that will expand as the restaurant gets its act together. We ordered the formule, which consisted of a small amuse bouche, an entrée (appetizer) a plat (main dish ours was gnocchi in a tomato sauce) and dessert, which we did not stay for as described below. We had a bottle of inexpensive Italian wine (Valpolicella, if I recall), which was good. The server was friendly but clearly overworked, especially as more tables were occupied during the evening. The amuse bouche and appetizer were fine. But the problem started showing up as the night dragged on. We were the third party in the restaurant on the evening we visited, and shortly after we finished our entrée one of the two earlier parties finished their meal, paid, and left. Their table, laden with dirty dishes, half eaten food, and empty wine glasses, stayed as it was until we left over 90 minutes later. The server was too overworked to clear it. It was unappetizing to look at, to say the least. But the real problem came with the plat. It was a simple plat: gnocchi and tomato sauce. That it took over an hour to be served after the entrée indicates to me that there was some major problem in the kitchen. At one point, I saw one of the employees nervously peeking out of the kitchen in the rear of the restaurant at the number of guests, all waiting on their meals. When at long last it came, it was underwhelming. The gnocchi were good. Clearly made in the house, they were soft little pillows of potatoey goodness. But the sauce was as bland as it could be. No garlic flavor, no herbs, no olive oil. It literally tasted as if it were tomato sauce out of a container heated up and seasoned with salt. I suspect the problem was that the sauce they had intended to serve was ruined for some reason, and the long wait for the plat occurred because the kitchen staff panicked, calmed themselves down, tried to think of what they could do to replace it, and came up with a very bland but expedient, at long last, substitute. We ate under the penetrating gazes of some of the other famished guests who still were waiting for their dinners, and decided to pay and leave without waiting even longer for dessert. I think our total time here was about 2 hours 30 minutes, almost all of it waiting and waiting and waiting (think here of the beginning monologue to the film Casablanca). If this were an established business and this kind of thing happened, I would give it one dot as a rating. But because this restaurant is just starting up and clearly has some kinks to work out, I'll give it three for now. I look forward to another visit, perhaps in a few months, and I hope to see substantial improvement. The town needs a decent Italian restaurant to supplement the several places serving pizza, and to provide an alternative to the profoundly mediocre Stromboli, and I hope Trattoria Paola can grow into such a place."
