When we went I asked which wagashi were vegan with the usual animal ingredient list and did mention the red food dye made from insects. The staff knew about this but still double checked and then told us about which wagashi had beetroot as food coloring and which ones had carmin. We opted for a simple monaka with anko and matcha. The menu changes each season so it is difficult to comment on the diversity since there are only 4 menu items to choose from. Each menu is approximately 30 euros and includes a tea and small dessert. We ordered the soba noodles, but frankly, they did not have much taste and there was significantly too much roquette on top making the dish taste very bitter.
