Notwithstanding its appelation, the fried white fish isn't greasy at all. It comes in a fine cornmeal coating and if I didn't know any better, I'd say it was air-fried. The crisp exterior kèeps that kind of fish soft and moist and really good. I've tried to prepare fish like that to no avail.
