We were here while we were in Parador. Dinner menu has vegan notations, but only a few articles available, and a seemingly vegan item (a veggie risotto recipe) appeared vegan and GF, but was not labeled as either and the staff had no knowledge of the ingredients or what would not have made it vegan.
