on board the california zephyr, as a vegan, we had enough to eat what we were grateful! nothing was spectacular. the vegan chili on a baked potato was available for lunch and dinner. the staff was willing to exchange a baked potato for the meat for the evening dinner entrees abs early piece kartoffeln for eggs in the morning.
