Paolo, dapper, classy and the best host ever, suggested a specialty pasta dish that was made from a recipe known only to his ristorante. It was a pappardelle made with a combination of tomato, pesto and pine nuts. The pasta itself was melt in your mouth fresh and the sauce was the best that we'd had on our Italian vacation up to that point.
